Watermelon Summer Sublime


The first thing that comes to our mind during summer is watermelon. A huge green fruit packed with slushy red stuff inside. This fruit is loaded with lycopene- a carotenoid that reduces our sunburn risk! When we consume watermelon it is similar to us consuming sunscreen. Watermelon is commonly seen fruit in summer. We all know that carotenoids are responsible to reduce the risk of heart diseases and a wide range of cancers. Watermelon contains 92% water hence keeps the body hydrated during summer. It is also an excellent source of anti-oxidants.

Watermelon has wonderful unique flavor that we don’t need to mix other fruits. A touch of lemon, a dash of ginger and mint is all it needs to bring out the flavor.

Serving :2 cups





Ingredients
4 cups of fresh watermelon cubes
1 tsp fresh lemon juice
Ginger sugar syrup**
4 mint leaves coarsely cut

Instructions
Blend the watermelon chunks and filter to get a clear juice
To the clear watermelon juice add lemon juice, ginger sugar syrup, coarsely cut mint leaves and ice cubes to get a cool refreshing lycopene packed watermelon juice.

Ginger sugar syrup** in a small sauce pot, add one teaspoon full of finely chop ginger, half a cup of sugar and half a cup of water. Boil the concoction until the sugar dissolves. When the syrup becomes viscous, remove from heat and cool the syrup to room temperature.
